Spelt and Goji Berry Loaf


 HELLO!
 Sunday's always a relaxing day. Calm and relaxed. Why not have a go baking this loaf? Its so easy , possibly the easiest loaf you will ever make! Its vegan , and a great source or fibre. Great served with homemade jam, marmalade or just butter. Hope you like it!


Spelt and Goji Berry Loaf
 Makes 10 slices

480g wholegrain spelt flour
1tsp baking powder
1tsp bicarbonate of soda
1tsp sea salt
80g pumpkin seeds
40g dried apricots, finely chopped, or raisins
40g Goji berries
1tbsp honey
520ml tepid water





Preheat the oven to 200C/180C fan/Gas mark 6. Lightly grease 1kg loaf tin and line it with baking parchment.

Combine all the dry ingredients, including the seeds and fruit, in a bowl,then the honey and water mix again until just combined.

Pour the mixture into the prepared loaf tin and bake in the oven for 50 minutes, then carefully remove the loaf from its tin and continue to bake the loaf upside down directly on the oven rack for a further 10 minutes.
Remove the loaf from the oven and leave it to cool completely before cutting. Once cool,cut into slices and spread with your favourite topping. This will keep in an airtight container for up to 3 days or in the freezer for up to 2 months. 





Hope you like this loaf. Its fun, easy and takes about an hour to cook.
